This is our summer flush green tea, resulting in larger, yellower leaves in this lot of tea. We rested the dried tea leaves for a few months before the final roasting and for the given price, are satisfied with the mid-range quality of this tea. Stems are also present in the tea.
This tea is a good reminder that plants do compensate for their environmental conditions and do adapt accordingly. Nature influences plant growth and also farming activities. We appreciate what nature presents to us each season. This harvest is often not the sweetest nor the most tender leaves, but it is warm and comforting. Island Green Tea is harvested from young shoots in early summer to bring out good balanced flavor. Harvesting comes when leaves are long and tender, picked at 3-4 leaves and a bud.
Tea plants for Island Green Tea maintain nice clean hedge look where new growth above the surface is harvested with our tea harvester.
Our pan-fire processing gives the leaves a gently twist, refreshing green aroma and mild astringency. High temperature roasting adds sweet nutty finish and light yellow to amber hue to the brew.
Island green tea is grassy. nutty, and subtly floral in its upfront aroma and flavor with mild astringency. Finished leaves are not sorted except for simple tea dust removal. Some stems and larger leaves are present in this tea. Large leaves and stems add extra nutty and earthy flavor.
Tea is grown without pesticides or any chemical inputs. Our farm animals, wild birds and various insects keep weeds and pests under control in the tea field.
Brewing:
Tea leaves hold up to 2-3 steepings. Steeping at 190-200F for 1-2min gives good balance in flavor with roast and mild floral aroma. Use spring water with moderate amount of minerals (30-150mg/l) and neutral pH for best result.
It’s pleasant for many green tea lovers experienced or just starting.
