Oolong tea (or semi-oxidized tea) is a slightly oxidized tea by natural enzymes that are in the tea leaf. Degree of oolong tea oxidation is generally considered to be between green tea and black tea Our Premium Oolong Tea goes through different harvesting and processing from our Premium Green Tea. Also we use different varieties of tea plants for oolong tea for more floral aroma and bolder taste. 2009 premium Oolong tea is all hand picked and hand processed at our farm for the best quality. Note from Taka - Aroma of this tea variety is unique and refreshing. It makes good oolong, but green tea also holds fine nasal tone. When I process this variety, I try to emphasize faint greener aroma so even though it is oolong, it is more toward green tea. The degree of oxidation is about 15-20%. I have experimented with this variety quite a bit and it makes decent black tea or dark oolong, but I am particularly fund of green oolong floral scent that reminds me of ginger flower. Flower of ornamental ginger which is different from edible root ginger has really sweet scent although you might imagine a bit of spicy punch from how the root tastes. Just a reminder. When you want aroma, you want your water hot, but this tea is closer to green tea so I still suggest you cool the water a little. You will kill the aroma by cooling too much. It comes with a bit of experience. Preparation Tips:Mauna Kea Premium Oolong Tea can be prepared easily in a tea pot or a gaiwan for best result. Leaf 5 g (0.2 oz )

| Time 60 sec | Preparing using a Tea pot or a Gaiwan - Boil water and pour boiling water in a tea pot and warm the pot.
- Drain the hot water out of the tea pot.
- Pour boiling water into your tea cups.
- Place Mauna Kea Premium Oolong tea into your warmed tea pot.
- Pour hot water from tea cups into the tea pot and let it sit for 60-90 seconds.
- Empty the tea pot by distributing tea evenly to the serving cups.
